Plum & Quinoa Salad

There are loads of ways to make a salad with this fluffy grain and after experimenting with various combinations of flavors, I think I’ve finally found the one. Earthy quinoa grains paired with juicy plums and crisp lamb’s lettuce as a base, sprinkled with some toasted walnuts and covered in tangy lemon honey dressing = a true symphony of flavor.

How to cook fluffy quinoa:

  • Thoroughly rinse and drain the quinoa.
  • Mix 1 part quinoa (any color) with 2 parts water in a saucepan and bring to boil.
  • Reduce the heat to low and cook until the quinoa has absorbed all of the water. 
  • Remove the pot from heat, cover, and let it sit for 10 more minutes. 
  • Remove the lid and fluff with a fork. 

INGREDIENTS

Salad

  • 1 cup quinoa, cooked and completely cooled
  • 6 plums, sliced
  • 2 ½ cups leafy greens (arugula, baby spinach, or lamb’s lettuce)
  • ⅓ cup walnuts, toasted & chopped

Dressing

  • 3 tbsp fresh lemon juice
  • 2 tbsp maple syrup or honey
  • 1 tbsp olive oil
  • salt to taste

METHOD

  • Mix all the salad ingredients gently into the cooled quinoa.
  • In a small jar, whisk together the dressing ingredients.
  • Pour the dressing over the salad and toss everything together.
