Doused in a tangy lemon honey dressing, this hearty Plum & Quinoa Salad is a treat year-round.

There are loads of ways to make a salad with this fluffy grain and after experimenting with various combinations of flavors, I think I’ve finally found the one. Earthy quinoa grains paired with juicy plums and crisp lamb’s lettuce as a base, sprinkled with some toasted walnuts and covered in tangy lemon honey dressing = a true symphony of flavor.


How to cook fluffy quinoa:
- Thoroughly rinse and drain the quinoa.
- Mix 1 part quinoa (any color) with 2 parts water in a saucepan and bring to boil.
- Reduce the heat to low and cook until the quinoa has absorbed all of the water.
- Remove the pot from heat, cover, and let it sit for 10 more minutes.
- Remove the lid and fluff with a fork.
INGREDIENTS
Salad
- 1 cup quinoa, cooked and completely cooled
- 6 plums, sliced
- 2 ½ cups leafy greens (arugula, baby spinach, or lamb’s lettuce)
- ⅓ cup walnuts, toasted & chopped
Dressing
- 3 tbsp fresh lemon juice
- 2 tbsp maple syrup or honey
- 1 tbsp olive oil
- salt to taste
METHOD
- Mix all the salad ingredients gently into the cooled quinoa.
- In a small jar, whisk together the dressing ingredients.
- Pour the dressing over the salad and toss everything together.
