Is there any dish more comforting and soul-soothing than this downright decadent, luxurious, and absolutely addictive homemade French Onion Soup?

The great thing about this French classic is that it only calls for a handful of budget-friendly ingredients, yet delivers the most amazing flavor. Made with perfectly caramelized onions in a cozy stock, crusty baguette slices covered in melty Gruyére, with a splash of crisp white wine and aromatic herbs, Soupe à l’Oignon Gratinée always hits the spot!

INGREDIENTS
Onion soup
- 5 large onions, peeled and thinly sliced
- 1 tbsp vegetable oil
- 2 tbsp unsalted butter
- ½ tsp table salt
- pepper to taste
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- ½ cup white cooking wine
- 8 cups beef stock
- 2 bay leaves
- 4 sprigs fresh thyme (or 1 tsp dried thyme)
Toasted baguette
- ½ baguette, sliced
- 1 ½ cups cheese of your choice, grated [some of the best for F.O.S. include: Gruyére, Fontina, Provolone, Mozzarella, Gouda, etc.]
- olive oil


Best dry white wines for cooking:
Sauvignon Blanc
Pinot Grigio
Unoaked Chardonnay

METHOD
Onion soup
- Place the butter and oil in a large pot and let it melt over medium-high heat. Add the onions and sprinkle some salt after 10 minutes. Sauté until richly browned (25-30 minutes). Depending on how strong your stovetop burner is you may need to reduce the heat to medium or medium low to prevent the onions from burning or drying out. Stir the onions every few minutes.
- Add garlic and sauté for 2 minutes. Stir in the flour and after couple of minutes stir in the wine to deglaze the pan scraping up any browned bits on the bottom of the pan.
- Add the stock, thyme, bay leaves, and pepper to taste, cover, and let it simmer for at least 10 minutes.
Toasted baguette + cheese
- Preheat oven to 400°F.
- Brush both sides of each slice of bread with olive oil and place on a baking sheet lined with parchment paper. Bake for 5-7 minutes, or until the slices are golden around the edges.
Broiling the topping
- Place your oven-safe bowls or crock on a baking sheet and ladle the soup into each bowl. Top with toasted baguette slices and grated cheese. Broil until the cheese is melted (2-4 minutes). Remove from the oven and enjoy!
