Apple Walnut Green Salad

INGREDIENTS

Salad

  • 5 cups salad greens of your choice (I used a combination of baby spinach and loose leaf lettuce)
  • 1 green apple, thinly sliced 
  • ½ small red onion, very thinly sliced
  • ½ cup freshly toasted walnuts, roughly chopped
  • ⅓ cup crumbled feta cheese
  • small handful of fresh parsley leaves, optional

Dressing

  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar (or lemon juice)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp honey or maple syrup

It should be perfectly sweet and sour, but adjust to your taste.

Tip: Slice the apple just before serving, since once cut, apples soon turn brown.

METHOD

  • Toss salad greens, cored and thinly sliced apple, red onion, toasted walnuts, feta, and parsley leaves together in a large bowl.
  • Whisk the dressing ingredients together until well combined, and pour over the salad immediately before serving.  

Tip: Make this salad vegan by swapping honey for maple syrup and by omitting the feta cheese.
