Moist and soft Simple Vanilla Cupcakes packed with bursting vanilla flavor and topped with an easy-to-make and incredibly addictive super delicious homemade buttercream.

When it comes to making cupcakes, this is one of the recipes in my collection that I tend to use over and over again. These delightful treats are stunningly light and beyond irresistible. I LOVE the fluffy, moist crumb with that buttery frosting. Basically everything you want in a cupcake. INGREDIENTS
Cupcakes
- 1 ¼ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 cup granulated sugar
- 1 cup whole milk
- ⅓ cup vegetable oil
- 1 large egg, room temp
- 1 tbsp pure vanilla extract
Vanilla Buttercream
- ⅓ cup butter, softened
- 3 cups powdered sugar
- 1 ½ tsp pure vanilla extract
- 1-2 tbsp milk




Vegetable oil vs. butter:
I prefer using vegetable oil in cupcakes since vegetable oil remains liquid at room temperature (making cupcakes perfectly moist), while butter turns solid.

METHOD
Cupcakes
- Preheat oven to 350°F. Place cupcake liners in a standard cupcake/muffin pan.
- Sift the flour, baking powder, baking soda, and sugar into a bowl and whisk together.
- In a separate bowl, whisk together the wet ingredients until well combined.
- Add the wet ingredients to the dry ingredients and mix until combined.
- Pour/scoop the batter into cupcake pan, filling each liner ⅔ of the way up.
- Bake for about 20 minutes, or until golden, or until skewer comes out clean.
- Allow to cool completely before frosting.
Vanilla Buttercream
- In a medium bowl, mix softened butter and powdered sugar using a handheld electric mixer or a stand mixer fitted with a paddle attachment.
- Stir in vanilla extract adding milk (a few drops at a time) until the buttecream is smooth and spreadable.

Once your cupcakes are completely cool, keep them covered, or in an airtight container at room temperature until you’re ready to decorate.
